King Crab Sandwiches
The king crab sandwich is a great gourmet picnic food as it is not time consuming to make and requires few ingredients. It also features King Crab, which is a tasty and succulent seafood. Serves four.
- To make the sandwiches you will need the following:
- 4 slices of cooked Bacon
- 4 cups of mixed Baby Lettuces
- 4 oz of diced ripe Brie Cheese
- 1 lb of King Crab Meat
- 1 1/2 teaspoon of freshly chopped Dill
- 4 warmed flour Tortillas
- 1 cup of diced Tomato
- 1/2 cup of Mayo
- Procedures are as follows:
Mix the mayo and dill together in a bowl. Place the brie and king crab meat together in a sauté pan.Warm them over medium heat until the cheese starts to melt. Place the warmed tortillas and spread 1 oz of the dill-mayo mix over each one. Top with a quarter of the brie and crab mixture,a quarter cup of diced tomatoes, a cup of mixed lettuces, and 1 slice of bacon, crumbled. Fold the ends up and roll into a tube and cut it in half at an angle.
Here's another gourmet picnic food that is both light and tasty, featuring delicious vegetables like butter lettuce. Aside from that, it is also healthy, quickly made, and very easily made; perfect for picnic food. Serves 4.
- Here are the ingredients needed for the Shrimp Salad:
- 1 diced Hass avocado
- 1/2 teaspoon of black peppercorns
- 1/2 lemon
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of extra-virgin olive oil
- Some freshly ground pepper
- 2 1-inch wide ribbon cuts of hearts of romaine
- 2 tablespoons of snipped chives
- 1 pound of deveined and shelled medium size shrimp
- A pinch of sugar
- 1 cup of halved grape tomatoes
- 2 tablespoons of vegetable or grapeseed oil
- To make the Shrimp Salad, you must:
Add a large pinch of salt and the peppercorns to the water. Squeeze the lemon into the water and let boil. Once the water is boiling, add the shrimp and simmer for approximately 3 minutes, or until the shrimp turns pink and starts curling. Afterwards, transfer the shrimp to a plate lined with paper towels, a slotted spoon would be ideal. Then freeze the shrimp for about 5 minutes or until it is just chilled.
While waiting for the shrimp to chill, whisk the grapeseed oil, sugar, olive oil, and a generous pinch of salt and pepper with the remaining lemon juice. Add the avocado, tomatoes, romaine, and shrimp and toss thoroughly.
