  • Aromatherapy Cuisine: Using Your Favorite Oils to add Splash to Summer Foods
    Now that summer is officially here, our home gardens are in their heyday. Spring's greens have already sprouted and given us the first gifts of the season, like bitter dandelion leaves, soft lettuces and nutrient-rich spinach. Now it's peas and squash, strawberries and raspberries. Last season you risked it and planted watermelon (and oh, what a harvest you had!). This summer you're branching out to cooking herbs and thinking of buying a backyard composting bin for all of your fertile scraps. No matter what you're growing in your garden or on your deck, the abundance of summer makes us want to eat healthy and pay attention to the earth, the real root of our nourishment.

    For much of the year, our produce is trucked in from far-flung farmlands. Once summer arrives, though, everyone gets the opportunity to claim their birthright as gardeners and cultivators of their own food. What's best, local summer harvests allow us to experiment with simple, nutritious meals. With very little effort, a meal of fresh vegetables and summer fruits can become a decadent feast. And if your simple cuisine asks for a hint of the exotic, you can harvest a bouquet of flavors from the most unlikely of places: your aromatherapy medicine chest.

    When buying aromatic oils, you should always strive to use medicinal-grade oils. These oils come from huge amounts of plant material, so it's wise to use high-quality oils from reliable sources. Of course we already consider this when we buy aromatherapy products for use on the skin. However, committing to therapeutic-grade oils has a secret plus: you can use these oils in food as well. If you've never seen your aromatherapy collection this way, just remember that smell has more control over our sense of flavor than even our taste buds! Keeping that little fact in focus, here are some hassle-free ways to use essential oils in your summer cuisine.

    First and foremost, let's address the issue of food safety. Essential oils are, obviously, plant-derived substances. While you may not want to eat a hunk of frankincense resin straight from the tree, frankincense is still a naturally occurring substance. It is not poisonous in small quantities, but it may make you want to brush your teeth immediately. Many essential oils are expressly dangerous for internal consumption, such as wintergreen and birch, but other oils can be used in small quantities for internal health as well as for cooking. In fact, the FDA has qualified many of the common essential oils as GRAS, Generally Recognized as Safe, substances. This means that, although they are not categorized as food additives, they can be consumed without apparent side-effects. When considering which oils to cook with, this is a good rule of thumb: essential oils of citruses, spices and other commonly-eaten foods are probably going to make excellent additions to your cuisine. Just be cautious when using essential oils that are known to irritate mucous membranes, such as cinnamon, oregano and peppermint.

    Now that you have the beginnings of a delicious summer harvest, take a moment to consider how essential oils might enhance the bounty. Citrus oils, like lemon and grapefruit, mix well with olive oil for salad dressings. Just add a couple of drops to two tablespoons of oil to zest up a summer salad. Lime essential oil can be blended with avocado for guacamole, and mandarin orange oil makes a great addition to spinach salad. And don't forget beverages! Citrus oils give juices and bubbly waters a great twist. Using equal parts lemon, lime and grapefruit, club soda becomes a refreshing citrus drink without the sugar or artificial sweeteners found in soda. Just remember, as with all essential oils, less is more. This rule applies to cooking, too, so use a light hand when sprinkling in these potent flavors.

    Ever thought about those essential oils derived from the bouquet of cooking herbs you've planted in your garden? Oregano, ginger, thyme, marjoram, bay and basil are ideal for cooking. If you love basil (and most of us do!) add a few drops of oil to a simple pasta of red pepper, olives and red onion, and your taste buds will dance. Or maybe you're a stir fry fanatic. Ginger oil, which is extremely powerful, adds kick to Asian food and is great for aiding digestion, too. Ever considered trying coffee with cardamom? A single drop of cardamom turns coffee into a feast for the senses. Try this blend iced on hot afternoons for a refreshing treat or even after meals. When cooking with these oils, though, remember that an excess of oil could potentially make your food inedible because they are so strong. Go easy, and consider tossing the oils in right at the end of cooking so they don't evaporate prior to mealtime.

    Not surprisingly, essential oils also enhance desserts. Two of the most well-loved dessert flavorings come as essential oils: vanilla bean and cacao. The aromatic oils, however, do not come laden with sugar, nor are they soaking in alcohol, the process used to create extracts. If you find yourself craving a sweet vanilla, try blending your essential oil with honey instead of sugar and see if your craving is curbed. The same can be said for cacao. This bitter, dark essential oil is not a candy bar, but it signals the brain the same way chocolate does. A decadent way of indulging your sweet tooth without jeopardizing your diet is to drip two drops of cacao or vanilla into yogurt and eat like ice cream.

    We think of summer cuisine, and its accompanying picnics and patio parties, year-round. The season's harvest helps us eat right and participate in the cultivation of our own food, a rare treat for many living in urban environments. Using aromatic oils to add variety and spice to our diet is easy and often enables us to forgo unnecessary trips to the grocery for specialty items. This summer, when a friend stops by unannounced and you're down to rice milk and coffee, don't despair. Take a drop of grapefruit oil and turn water and ice into a refreshing citrus drink. After all, that's how it's done in the summertime!

    Essential oils have been revered for their therapeutic and beautifying abilities since the first human civilizations emerged. Oils and resins, as hard-to-obtain substances, have long had special roles in medicine and religious activities. In order to obtain an essential oil, an inordinate amount of the plant must be collected, making the end product highly valuable. Perhaps the most well-known documentation of aromatic oils being used in religious contexts is in the Old and New Testaments. The Bible recounts many uses of aromatic oils as objects of prosperity, kindness, health and worship. We see instances of herbs like spikenard being used to anoint Jesus and frankincense being turned into a precious incense for use in religious ceremonies. The Bible shows us that the use of essential oils and resins has always been a critical part of worship for Jews and Christians.

    The distillation process for essential oils is a relatively new phenomenon that requires a still and a large amount of water to steam out the essential oils. Most likely, the oils we read about in the Bible were infusions of plant material into other more common oils. This, however, does not reduce their potency or their cultural and historical significance. Frankincense, myrrh and the other oils of the Bible were held in high esteem and difficult to obtain. Regardless of their distillation process, creating an aromatic oil has always been a labor-intensive project.

    We find about twelve essential oil plants listed in the Bible: juniper, myrtle, spikenard, frankincense, myrrh, galbanum, cinnamon, cedar, cedar and sandalwood, hyssop and cypress. One part of the puzzle that is unclear to modern scholars is whether all these plants were used as essential oils or if they were herbal plant remedies. Regardless, the Bible certainly makes reference to the Jews and Christians using these plants for anointing and also for medicine. There are varying interpretations of how many healing plants mentioned in the Bible were used for medicinal or sacred purposes. However, contemporary aromatherapy still recognizes these oils as important ingredients in the essential oil repertoire, and it is clear humankind has valued these plants for thousands of years.

    The aromatic plants of the Bible reflect the dryness of the Middle East. These plants can survive harsh climates and little rainfall. Fortunately for humankind, this unforgiving environment has given birth to many of aromatherapy's most well-loved plants. The oils of the Bible come from a variety of plants, most of which are hardy, desert-dwellers. Cinnamon is a bark from an aromatic tree that curls once it is removed and dried. Sandalwood, cedar, cypress and juniper are also all trees or shrubs found in the Mediterranean region. Historically, they were used for wood as well as medicine, aromatherapy and incense. Frankincense, myrrh and galbanum are resins derived from the barks of trees. They are often burned directly, also used in incense and retain their aromatic qualities for a long period of time. Modern aromatherapy often uses frankincense and myrrh for their abilities to connect us to higher planes of awareness. The frequently mentioned hyssop is an aromatic plant with purple flowers that is widely cultivated for use in cooking and herbal medicine. Myrtle, a flowering short tree or shrub, is a common aromatherapy plant as well that grows wild in these dry climates. Finally, spikenard, also called nard in the Bible, is a plant that is native to the Himalayan region of Asia. It was imported to the Middle East and used as an expensive perfume.

    When searching for Biblical references to medicinal plants, the Old Testament is the place to begin. Myrrh, one of the first oils to be referenced, can be found in Exodus 30:23-29. After wandering in the desert after their escape from Egypt, the Israelites, led by Moses, were asked by God to have an anointing oil made for the ritualistic objects in the Tabernacle in the Wilderness. This portable altar was carried as the Israelites roamed for forty years in the desert. The oil, which was made from olive oil, cinnamon, cane and myrrh, was used to transform the ritual implements into sacred instruments. The process of anointing both humans and objects can be found throughout the Bible as an act of faith and worship.

    Jesus's life history has a number of instances when essential oils were conferred on him as acts of faith and appreciation. The book of Matthew tells of the kings from the East that came to offer Jesus gifts at his birth, notably frankincense and myrrh. As we already learned, these two resins are often used in modern times to assist in spiritual work. Jesus also received gifts of spikenard from two women. The first woman cracked a jar of spikenard and poured it above Jesus's head. The second gift-giver, Mary Magdalene, used her life savings of the same plant oil to anoint his feet. Using her hair, she then massaged the oil into his skin. These acts of faith and gratitude were seen as humble sacrifices as spikenard was a particularly expensive oil to obtain.

    Today, the oils of the Bible are frequently used in aromatherapy for healing physical ailments, connecting with spiritual or meditative states and even as offerings in religious contexts. Many of these oils have been used in unison, such as frankincense and myrrh, for thousands of years. Their widespread cultivation and our appreciation for their medicinal qualities have traversed the globe as Jews and Christians have continued to respect and use these rare oils. While aromatherapy as it is practiced today is a relatively new field of medicine, the use of medicinal oils is actually as old as civilization itself. By learning how these plants were used during Biblical times, we can connect to traditions that have recognized the relationship between humankind, the plant world and spiritual awakening.

    Few plants offer the world as many benefits as the coconut. Its name, 'kalpa vriksha' in Sanskrit, translates to 'the tree which provides all that is necessary for life.' This tree is biologically related to grasses and has provided food and medicine for countless peoples across the earth. In India, Ayurvedic doctors have long utilized the coconut for health and healing, and much of the information we've gathered regarding this plant's medicinal qualities have been used with great effect for centuries.

    Taking almost nine months to filter each liter of water in its shell, the coconut is an amazing natural water filter. The water is pulled up through micro-fibers which purify it before it ends in the actual nut of the coconut. This clear life-giving fluid is one of the highest sources of electrolytes found in all of nature. Coconut water is a great re-hydrator and makes an ideal sports drink. When we consume a drink consisting of 55% fresh coconut water and 45% fresh green-leaf juice, or blue-green algaes, we create for ourselves an instantaneous infusion of life energy.

    In the inquiry on healthy versus unhealthy fats, coconut oil tips the scales in terms of its nutritional value. While it is a saturated fat, not all saturated fats are harmful for us. Coconut oil is cholesterol-free and does not change into a trans-fat, which means it can be used at high heat. It has also been shown that coconut oil is more powerful than olive oil in controlling cholesterol. Also, because it is a medium-chain fatty acid, it is easier for the body to digest, meaning the fat can be used more readily as fuel.

    In terms of its nutritive and cosmetic applications, coconut oil is one of the most important oils in the spectrum of fats. It is useful to the thyroid, helping the production of anti-aging steroids, DHEA, pregnenolone and progesterone. Heart disease, cancer, obesity, senility and other common diseases related to aging are abated by these steroids. Capryllic and lauric acid are also found in coconut, which both help control bacteria, funguses and viruses in the body. In fact, caprilyc acid is the most effective combatant for yeast invasions, making coconut a good oil to work with regulating systemic and localized flare-ups. If these qualities aren't enough, using coconut oil as your oil of choice in cooking can help regulate blood sugar, aiding harmony in all body systems. When using coconut oil medicinally, adults should use at least two or three tablespoons daily.

    Not only is coconut a healthy fat choice, but it is also a delicious addition to one's diet. It can be used as a natural replacement for butter, margarine or other oils. The raw coconuts in their young stage are the most health-enhancing. The soft meat, also known as 'spoon meat,' consists of mostly pure, raw, saturated fat. The meat can be pureed and topped with bananas or other fruit. Coconut oil, or coconut butter, can be blended into salad dressing or smoothies. Coconut butter can also be used on top of brown rice or oats or spread on your favorite bread with cinnamon or jam.

    Coconut's reputation as a skin nutrient is well-documented, and people with many skin types can benefit from its moisture-giving qualities. In aromatherapy, both virgin and fractionated coconut oils are used. A way to see the difference is to remember that virgin coconut oil looks more like coconut flesh. It is a solid fat that is used in both cooking and body care, and it can be mixed with aromatic oils. While it is certainly a dense oil, virgin coconut oil doesn't leave the skin feeling too oily, as it is absorbed rapidly. Fractionated coconut has similar qualities, but it is made by physically reducing the size of the fat molecule, removing the section of the molecule that makes it a solid. This creates a liquid oil that has no odor, lasts a long time (its molecular structure makes it "fully saturated," meaning it has no atomic space for oxygen to attach, thereby deteriorating the oil) and is quickly consumed by the skin. Sometimes coconut is mixed with other oils, like jojoba, resulting in a nutrient-rich cream. With so many coconut oils to choose from, mixing coconut with aromatic oils is a simple way to add to your health and beauty regimen.

    If you're searching for a multi-use, healthy oil, search no further than the coconut. Whether you use it in skin blends, salads or massage creams, the coconut is an all-around excellent choice as both a carrier and edible oil. It takes essential oils beautifully and will not leave your skin feeling heavy or greasy. Use it in its many forms and see how this unique plant continues to benefit us in our day to day lives.
